Peel, core, and slice the quince into thin wedges. In a saucepan, combine the quince with a little water and simmer over low heat for about 10-15 minutes until soft. Drain and set aside.

In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and egg until just combined.

Fold the cooked quince, blue d'Affinois cheese (crumbled), and fresh thyme leaves into the cobbler dough until evenly distributed.

Preheat your oven to 375°F (190°C). Pour the mixture into a greased baking dish and spread evenly. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
