Method

Prepare the Lamb Rack

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub the mixture all over the boneless lamb rack and let it marinate for at least 30 minutes.

    Sear the Lamb

    Preheat the oven to 200°C (400°F). Heat a skillet over medium-high heat. Sear the lamb rack on all sides until browned, about 3-4 minutes per side.

    Roast the Lamb

    Transfer the lamb rack to the oven and roast for about 15-20 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Cook the Maitake Mushrooms and Peas

    Sauté Shallots and Mushrooms

    In the same skillet used for the lamb, add butter and minced shallots. Sauté until translucent. Add the maitake mushrooms and cook until tender, about 5-7 minutes.

    Add Peas

    Stir in the fresh peas and cook for an additional 3-4 minutes. Season with salt and black pepper to taste.

Prepare Lettuce Garnish

    Dress Lettuce

    In a small bowl, whisk together lemon juice, olive oil, and salt. Drizzle over the butter lettuce leaves.

Serve

    Plate the Dish

    Slice the lamb rack and arrange it on a plate. Top with the sautéed maitake mushrooms and peas. Garnish with dressed butter lettuce leaves.
