Prepare the Tart Crust

    Make the Dough

    In a large bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Blind Bake the Crust

    Preheat the oven to 375°F (190°C). Roll out the chilled dough and fit into a tart pan. Prick the bottom with a fork and bake for 15 minutes. Remove from oven and let cool.

Prepare the Onion Filling

    Cook the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions, thyme, salt, and pepper. Cook, stirring often, until onions are caramelized and soft, about 20 minutes.

Assemble and Bake

    Assemble the Tart

    Spread the caramelized onions evenly over the cooled tart crust. Arrange the sliced bluefin tuna on top, followed by the black olives.

    Final Bake

    Bake the tart in the oven for an additional 10-15 minutes until warmed through. Remove from oven and garnish with fresh parsley and lemon zest before serving.
