Terrine Preparation

Prepare the Mixture
In a food processor, combine the pork shoulder, duck liver, heavy cream, egg, shallots, garlic, thyme, salt, and pepper. Blend until smooth.

Mold the Terrine
Transfer the mixture into a terrine mold and smooth the top. Cover with foil.

Bake
Place the mold in a water bath and bake at 160°C (320°F) for about 1 hour, or until set. Let it cool, then refrigerate for at least 12 hours.

Cool and Store
Remove from heat and let cool. Store in an airtight container in the refrigerator.
Mustard Greens Preparation

Sauté the Greens
In a skillet, heat olive oil over medium heat. Add mustard greens and sauté until wilted, about 5-7 minutes. Season with salt.
