Prepare the Chocolate Ganache

Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes.

Combine and Cool

After 5 minutes, stir the mixture until smooth and glossy. Allow it to cool at room temperature until it thickens slightly.

Prepare the Cherry Topping

Mix the Cherries

In a bowl, combine the pitted cherries with sugar and kirsch. Let it sit for about 15 minutes to macerate.

Prepare the Chantilly Cream

Whip the Cream

In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip the cream until soft peaks form.

Assemble the Dessert

Layer the Components

In a serving dish, layer the chocolate ganache, followed by the macerated cherries, and top with a generous dollop of chantilly cream. Repeat the layers if desired.
