Prepare Confit Potatoes

    Preheat your oven to 250°F (120°C). In a baking dish, combine baby potatoes, garlic, thyme, salt, and olive oil. Ensure potatoes are covered in oil.

    Cover the baking dish with foil and bake for about 2 hours or until the potatoes are tender.

Charred Onion

    Slice the onion into thick rounds. Heat a skillet over medium-high heat and add olive oil. Once hot, add the onion slices and sear until charred, about 3-4 minutes per side.

    Drizzle the balsamic vinegar over the charred onions and season with salt and pepper. Set aside.

Prepare King Oyster Mushrooms

    Slice the king oyster mushrooms lengthwise. Heat olive oil in a skillet over medium heat and add the mushrooms.

    Sauté until golden and tender, about 5-7 minutes. Season with salt and pepper.

Cook Beef Tenderloin
