Beef Ribeye Preparation

    Season the Steak

    Generously season the ribeye steaks with salt and black pepper on both sides.

    Heat olive oil in a skillet over high heat. Add the ribeye steaks and sear for 4-5 minutes on each side for medium-rare, depending on thickness. Remove from heat and let rest.

Black Garlic Purée

    In a blender, combine black garlic, olive oil, lemon juice, and salt. Blend until smooth and creamy.

Spiced Jus

    Prepare the Jus

    In a saucepan, combine beef stock, red wine, thyme, and rosemary. Simmer over medium heat until reduced by half. Adjust seasoning with salt.

Gem Lettuce Salad

    Toss the gem lettuce, halved cherry tomatoes, and sliced cucumber in a bowl. Drizzle with olive oil and balsamic vinegar, then season with salt to taste.

Plating
