Method

Prepare the Tartare

    Mix the Ingredients

    In a bowl, combine the finely diced Wagyu beef, egg yolk, chopped shallots, capers, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix gently until well combined.

    Chill

    Cover the tartare mixture with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Bone Marrow

    Roast the Bones

    Preheat the oven to 450°F (230°C). Place the bone marrow bones on a baking sheet, season with salt, and roast for about 15-20 minutes or until the marrow is soft and bubbly.

    Garnish

    Remove from the oven and sprinkle with fresh chopped parsley. Serve with lemon wedges.

Make the Parker House Rolls

    Activate Yeast

    In a bowl, combine warm milk, sugar, and yeast. Let sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

    Knead

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth.

    Place the dough in a greased bowl, cover with a towel, and let rise for about 1 hour or until doubled in size.

    Preheat the oven to 375°F (190°C). Punch down the dough, shape into rolls, and place in a greased baking dish.

    Brush the rolls with beaten egg and bake for about 15-20 minutes or until golden brown.
