    Prepare the Chicken

    In a bowl, mix together flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In a separate bowl, whisk together the egg and water. Dip each chicken thigh in the egg mixture, then coat it in the dry mixture thoroughly.

    Fry the Chicken

    Heat vegetable oil in a deep pan over medium heat. Once hot, fry the chicken pieces in batches until golden brown and cooked through, about 6-8 minutes per batch. Remove and drain on paper towels.

    Make the Sauce

    In a saucepan, combine gochujang, honey, and sesame oil over medium heat. Stir until the mixture is well combined and slightly thickened, about 2-3 minutes.

    Toss the Chicken

    In a large bowl, add the fried chicken and pour the sauce over it. Toss until the chicken is evenly coated.

    Prepare the Sautéed Spinach

    In a separate pan, heat a small amount of oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add spinach and soy sauce, and stir-fry until the spinach is wilted, about 2-3 minutes.

    Plate the Korean fried chicken and sautéed spinach. Sprinkle sesame seeds over the top before serving.
