    Make the Udon Noodles

    In a large bowl, combine the all-purpose flour and salt. Gradually add water, mixing until the dough forms. Knead the dough for about 10 minutes until smooth, then cover it and let it rest for 30 minutes.

    Prepare the Mushroom Broth

    In a pot, soak the dried shiitake mushrooms in 4 cups of water for at least 30 minutes. After soaking, bring the water to a boil and let it simmer for 15 minutes, then add the fresh shiitake mushrooms and simmer for another 10 minutes.

    Make Black Garlic Butter

    In a small pan over low heat, melt the butter. Add the minced black garlic and sauté for 2-3 minutes until fragrant. Stir in soy sauce and remove from heat.

    Roll and Cut Udon

    After resting, roll out the udon dough to about 1/4 inch thickness. Cut the dough into strips of desired width for udon. Dust with flour to prevent sticking.

    Cook Udon Noodles

    In a large pot of boiling salted water, cook the udon noodles for about 4-5 minutes until they float and are tender. Drain and rinse under cold water.

    Assemble the Dish

    In serving bowls, place the cooked udon noodles. Ladle the hot mushroom broth over the noodles, drizzle with black garlic butter, and garnish with sliced green onions and a drizzle of sesame oil.
