    Prepare the Seaweed

    Soak the dried wakame seaweed in a bowl of water for about 10 minutes until it expands and softens. Drain and set aside.

    Prepare the Cucumber

    Thinly slice the cucumber using a mandoline or a sharp knife. Place the slices in a bowl and sprinkle with a pinch of salt. Let it sit for 5 minutes, then drain excess water.

    Make the Dressing

    In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and chili flakes to taste. Adjust seasoning as necessary.

    Combine Ingredients

    In a large mixing bowl, combine the drained seaweed, cucumber slices, and dressing. Toss well to combine.

    Carefully shuck the oysters and place them on a serving plate.
