    Cook the Rice

    Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, spread it out on a baking sheet to cool.

    Prepare the Duck

    Remove the confit duck leg from its fat and shred the meat into bite-sized pieces, discarding the bone and skin.

    Sauté Vegetables

    In a large stone pot or skillet, heat vegetable oil over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant, about 2-3 minutes. Add diced carrots and green peas, cooking for another 3-4 minutes.

    Scramble the Eggs

    Push the vegetables to one side of the pot. Crack the eggs into the pot and scramble until cooked through. Mix with the vegetables.

    Add Rice and Proteins

    Add the cooled rice, shredded duck, and king crab meat to the pot. Stir well to combine.

    Season the Rice

    Pour in the gluten-free soy sauce and fish sauce. Season with salt and black pepper to taste. Stir-fry everything together for about 5 minutes, ensuring everything is well mixed and heated through.

    Garnish and Serve

    Remove from heat and stir in chopped green onions and cilantro. Serve with lime wedges on the side for squeezing over the rice.
