Preparation and Cooking

    Prepare the Bao Buns

    In a large bowl, mix flour, yeast, sugar, and salt. Gradually add warm water and knead until a smooth dough forms. Cover and let rise for about 1 hour or until doubled in size.

    Shape and Steam Bao Buns

    Divide the dough into equal portions, shape into balls, and flatten slightly. Place on parchment paper and steam for 10-15 minutes until fluffy.

    Prepare the Green Chili Aioli

    Blend green chili, egg yolks, and vegetable oil in a food processor until smooth. Drizzle in yuzu juice while blending until creamy. Season with salt to taste.

    Prepare Yuzu Pickles

    Thinly slice the cucumber and marinate in rice vinegar and yuzu juice for at least 30 minutes.

    Cook the Soft Shell Crabs

    Heat vegetable oil in a skillet over medium-high heat. Dredge the soft shell crabs in flour and fry for about 3-4 minutes per side until golden brown.

    Assemble the Bao Buns

    Fill each bao bun with a fried soft shell crab, drizzle with green chili aioli, and top with yuzu pickles.
