    Prepare the Ceviche

    In a medium bowl, combine the fresh snapper fillet, lime juice, red onion, cilantro, jalapeño, and salt. Mix well and let it marinate for about 15 minutes until the fish is opaque.

    Make the Coconut Cream

    In a separate bowl, whisk together the coconut cream and sugar until well combined. Set aside.

    Prepare the Basil Tuille

    In a blender, combine fresh basil leaves and water. Blend until smooth. Strain the mixture through a fine sieve to obtain a basil-infused liquid. Gently simmer the liquid in a saucepan until reduced by half. Allow it to cool and thicken slightly.

    Plate the Dish

    To serve, place a small scoop of the ceviche on a plate, drizzle with coconut cream, and add a few drops of basil tuille around the ceviche. Garnish with additional fresh basil leaves if desired.
