Method

Prepare Bone Marrow

    Roast Bone Marrow

    Preheat your oven to 450°F (230°C). Place the beef bone marrow pieces on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Roast for 15-20 minutes, until the marrow is bubbling and slightly browned.

Make Shiso Chimichurri

    Blend Ingredients

    In a food processor, combine shiso leaves, parsley, garlic, red wine vinegar, olive oil, salt, and black pepper. Pulse until finely chopped but still slightly chunky. Adjust seasoning if necessary.

Prepare Miso Toast

    Toast Bread

    Spread white miso paste evenly on one side of each slice of sourdough bread. In a skillet, melt butter over medium heat. Place the miso side down in the skillet and toast for 2-3 minutes until golden brown. Flip and toast the other side for another 1-2 minutes.

Assembly

    Serve

    Once the bone marrow is ready, remove from the oven. Serve immediately with the shiso chimichurri and miso toast on the side.
