Cook the Sushi Rice
Rinse the sushi rice in cold water until the water runs clear. Combine the rinsed rice and water in a pot. Bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes. Remove from heat and let it sit for 10 minutes with the lid on.

Prepare Sushi Rice Seasoning
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl and fold in the vinegar mixture gently. Let it cool to room temperature.

Cook the Salmon
While the rice cools, season the salmon fillet with soy sauce and sesame oil. Heat a non-stick skillet over medium heat and cook the salmon for about 3-4 minutes on each side until cooked through. Remove from heat and let it cool, then flake into bite-sized pieces.

Prepare the Crispy Rice
In the same skillet, heat the vegetable oil over medium-high heat. Once hot, add the cooled sushi rice, pressing it down into an even layer. Cook for about 5-7 minutes until the bottom is golden and crispy. Carefully flip the rice over and cook the other side for another 5-7 minutes.

Assemble the Dish
Cut the crispy rice into squares or rectangles. Top each piece with flaked salmon, a dot of wasabi paste, and a sprinkle of chopped green onions. Serve with nori sheets on the side.
