Cooking Instructions
- 1
Prepare the Grouper
Preheat the oven to 200°C (400°F). Rub the grouper fillet with olive oil, salt, and black pepper. Place it on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- 2
Cook the Stewed Beans
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in the white beans and vegetable broth. Simmer for 10-15 minutes to combine the flavors. Season with salt and pepper to taste.
- 3
Make the Coriander Puree
In a blender, combine cilantro leaves, lemon juice, a pinch of salt, and a splash of water. Blend until smooth. Adjust seasoning as needed.
- 4
Plate the Dish
On a plate, spoon the stewed white beans, place the roasted grouper on top, and drizzle with the coriander puree. Serve immediately.
