Prepare the Filling
In a large mixing bowl, combine the ground pork, chopped shiitake mushrooms, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the pork filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a half-moon shape, and pinch the edges to seal. Repeat until all filling is used.

Pan-Sear the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet, flat side down. Cook for about 2-3 minutes until the bottoms are golden brown. Carefully add about 1/4 cup of water to the pan and cover immediately to steam the gyoza for about 5 minutes.

Serve
Once the gyoza are cooked through and the water has evaporated, remove from the skillet. Serve hot with truffle ponzu sauce for dipping.
