Prepare the Filling
In a mixing bowl, combine ground pork, finely chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.

Fill the Gyoza Wrappers
Place a gyoza wrapper in the palm of your hand. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Make pleats along the edge for a decorative touch.

Cook the Gyoza
Heat a non-stick skillet over medium heat and add a tablespoon of oil. Place the gyoza in the skillet, flat side down, and cook for about 2-3 minutes until the bottoms are golden brown. Add 1/4 cup of water to the pan, cover with a lid, and steam for an additional 5-6 minutes.

Prepare the Truffle Ponzu Sauce
In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of lemon juice, and a few drops of truffle oil. Stir well to combine.

Serve
Serve the gyoza hot with the truffle ponzu sauce on the side for dipping.
