    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern and season generously with salt and pepper. Place the pork belly in a roasting pan, skin side up, and roast for about 3 hours or until the meat is tender and the skin is crispy.

    Make the Yuzu Pickles

    In a bowl, combine the sliced cucumber and julienned carrot. Add yuzu juice and a pinch of salt. Toss well and let it marinate for at least 30 minutes.

    Prepare the Bao Buns

    Steam the bao buns according to package instructions until warm and fluffy, usually about 10 minutes.

    Assemble the Bao Buns

    Once the pork belly is cooked, slice it into thin pieces. Place a slice of pork belly in each bao bun, add a spoonful of chipotle aioli, and top with the yuzu pickles. Serve immediately.
