Method

Preparing the Lamb Chops

    Season the Lamb

    In a bowl, mix olive oil, minced garlic, salt, black pepper, and chopped rosemary. Rub this mixture onto the lamb chops and let marinate for at least 30 minutes.

    Cook the Lamb

    Preheat a grill or skillet over medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

Making the Chinese Pancakes

    Prepare the Dough

    In a mixing bowl, combine flour and boiling water. Mix until a dough forms. Knead on a lightly floured surface for about 5 minutes until smooth. Cover and let rest for 30 minutes.

    Roll and Cook the Pancakes

    Divide the dough into small balls. Roll each ball into a thin circle. Brush one side with sesame oil and place another circle on top. Cook in a hot skillet until both sides are golden brown, about 2 minutes per side. Separate the pancakes while they are still warm.

    Serve the grilled lamb chops with Chinese pancakes, garnished with sliced scallions and a drizzle of hoisin sauce on the side.
