    Prepare the Fish

    Preheat your grill to high heat. Rinse the branzino under cold water and pat dry with paper towels. Drizzle olive oil over the fish and season inside and out with salt and black pepper. Squeeze the juice of one lemon over the fish, reserving the other for serving.

    Grill the Fish

    Place the prepared branzino on the grill and cook for about 6-8 minutes on each side, or until the skin is crispy and the flesh is opaque and flaky. Use a spatula to carefully flip the fish halfway through cooking.

    Prepare the XO Chimichurri

    In a bowl, combine the chopped cilantro, parsley, minced garlic, red chili flakes, and red wine vinegar. Slowly whisk in the olive oil until fully combined. Season with salt and black pepper to taste.

    Serve

    Once the fish is cooked, remove it from the grill and place it on a serving platter. Drizzle generously with the XO chimichurri and garnish with lemon wedges. Serve hot.
