    Prepare the Steak

    Remove the Tomahawk steak from the refrigerator and let it come to room temperature for about 1 hour. Preheat your grill or oven to high heat.

    Season the Steak

    Generously season the steak with kosher salt and freshly ground black pepper on both sides. Drizzle with olive oil and rub it in.

    Cook the Steak

    Place the steak on the grill or in the oven. Cook for about 4-5 minutes per side for medium-rare, adjusting the time to your preferred doneness. Use a meat thermometer for accuracy (130°F for medium-rare).

    Rest the Steak

    Remove the steak from the heat and let it rest for at least 10 minutes before slicing.

    Make the Roasted Garlic Jus

    While the steak is resting, preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes until soft.

    Prepare the Jus

    In a saucepan, combine the beef stock, red wine, and fresh thyme. Simmer over medium heat until reduced by half. Squeeze the roasted garlic cloves into the mixture and whisk in the unsalted butter until smooth.

    Slice the steak and serve with the roasted garlic jus drizzled on top.
