Prepare the Noodles
Soak the glass noodles in warm water for about 20 minutes or until soft. Drain and set aside.

Cook the Chicken and Shrimp
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced chicken and cook until it turns golden brown. Add the shrimp and cook until they are pink and opaque. Remove from the pan and set aside.

Scramble the Eggs
In the same pan, add another tablespoon of vegetable oil. Crack in the eggs and scramble them until fully cooked.

Combine Everything
Return the chicken and shrimp to the pan. Add the soaked glass noodles, pad Thai sauce, bean sprouts, and scallions. Toss everything together and stir-fry for another 2-3 minutes until heated through.

Serve
Top with crushed peanuts and serve hot.
