Prepare the Noodles
Cook the rice noodles according to package instructions. Drain and set aside.

Cook the Chicken
In a large pot, add the chicken broth and bring to a boil. Add the sliced chicken breast and cook until no longer pink, about 5-7 minutes.

Add Flavors
Stir in the coconut milk, Thai red curry paste, fish sauce, lime juice, and sugar. Mix well and let simmer for 5 minutes.

Add Vegetables
Add the red bell pepper and bean sprouts to the soup. Cook for an additional 3-4 minutes until the vegetables are tender.

Combine Noodles
Add the cooked rice noodles to the pot and stir to combine. Heat through for another 2 minutes.

Ladle the soup into bowls and garnish with chopped cilantro and green onions before serving.
