Marinate the Salmon
In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Mixed Vegetables
In a large skillet, heat the sesame oil over medium heat. Add the mixed vegetables and stir-fry for about 5-7 minutes until they are tender but still crisp.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to form a slurry. Add this to the skillet with the vegetables, stirring continuously until the sauce thickens. Season with salt and black pepper to taste.

Serve
On a plate, create a bed of stir-fried mixed vegetables and place the grilled salmon on top. Drizzle with additional marinade if desired and sprinkle with sesame seeds.
