Marinate the Chicken
In a bowl, whisk together soy sauce, brown sugar, honey, ginger, garlic, and sesame oil. Add the chicken breasts and marinate in the refrigerator for at least 30 minutes.

Prepare the Stir-fried Vegetables
In a large skillet or wok, heat a bit of oil over medium heat. Add the mixed vegetables and stir-fry for about 4-5 minutes, or until they are tender-crisp.

Make the Brown Sauce
In a small bowl, mix cornstarch and water until smooth. Add the reserved marinade to the skillet with the vegetables and bring it to a simmer. Stir in the cornstarch mixture to thicken the sauce, cooking for an additional 1-2 minutes.

Serve the Dish
Slice the grilled chicken and serve it over a bed of the stir-fried vegetables. Drizzle with extra sauce if desired, and garnish with sesame seeds and sliced green onions.
