Prepare the Noodles
Soak the rice noodles in hot water for about 20 minutes or until soft. Drain and set aside.

Stir-fry the Protein
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add your choice of protein (chicken, beef, pork, or tofu) and stir-fry until cooked through, about 5-7 minutes. Remove from the pan and set aside.

Cook the Broccoli
In the same pan, add another tablespoon of vegetable oil, then add the Chinese broccoli. Stir-fry for about 3-4 minutes until tender but still crisp.

Add Noodles and Sauces
Add the softened rice noodles to the pan with the broccoli. Pour in the soy sauce and sweet soy sauce, and toss everything together. Stir-fry for 2-3 minutes until the noodles are well coated.

Combine Everything
Add the cooked protein back into the pan and mix everything thoroughly. If using shrimps, add them at this stage and stir-fry for an additional 2-3 minutes until they are cooked through.

Taste and adjust seasoning if needed. Serve hot and enjoy your Pad-See-Ew!
