Prepare the Noodles
Soak the rice noodles in warm water for about 20-30 minutes or until softened. Drain and set aside.

Cook the Protein
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken slices and cook until no longer pink, about 3-4 minutes. Add shrimp and cook until they turn pink and opaque, about 2-3 minutes. If using tofu, add it at this stage and cook until golden.

Combine Ingredients
Add the softened rice noodles to the skillet with the protein. Pour in the Pad Thai sauce and toss everything together until the noodles are well coated.

Add Vegetables
Add the bean sprouts, scallions, and sweet turnips. Stir-fry for an additional 2-3 minutes until the vegetables are slightly tender.

Serve
Remove from heat and serve hot, garnished with crushed peanuts and lime wedges on the side.
