1. Prepare the Beef

Heat vegetable oil in a large pot over medium heat. Add the beef short ribs and sear on all sides until browned. Remove and set aside.

2. Create the Curry Base

In the same pot, add yellow curry paste and sauté for about 2 minutes until fragrant. Stir in the coconut milk and beef broth, bringing the mixture to a simmer.

3. Braised Beef

Return the beef short ribs to the pot. Cover and let simmer on low heat for about 2 hours, or until the beef is tender and easily pulls apart.

4. Cook the Noodles

While the beef is braising, cook the yellow egg noodles according to package instructions. Drain and set aside.

5. Assemble the Dish

Once the beef is ready, remove it from the pot and shred the meat. In serving bowls, place a portion of the cooked noodles, topped with shredded beef, and ladle the yellow curry sauce over the top.

6. Garnish and Serve

Top with bean sprouts, crispy fried noodles, and garnish with pickled cabbage, lime wedges, and red onion slices. Serve hot.
