Prepare the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually add water and mix until smooth. Set aside.

Prepare the Fish
Pat the haddock fillets dry with paper towels. Dip each fillet into the batter, ensuring they are evenly coated.
Cooking the Fish

Fry the Fish
Heat oil in a deep frying pan over medium-high heat. Fry the battered haddock fillets until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Making the Sauces

Prepare Ginger Sauce
In a saucepan, heat a tablespoon of sesame oil over medium heat. Add onions, ginger, and shiitake mushrooms, sauté until softened. Stir in red bell pepper, soy sauce, and sugar. Cook for an additional 2-3 minutes, then remove from heat.

Prepare Spicy Sauce
In another saucepan, heat a tablespoon of oil over medium heat. Add onions, garlic, and mushrooms. Sauté until softened. Stir in scallions, bell pepper, basil leaves, chili paste, and soy sauce. Cook for about 3-4 minutes, and remove from heat.

Serve the fried haddock fillets topped with either ginger sauce or spicy sauce. Enjoy!
