    Prepare the Asparagus

    Wash and trim the asparagus. Toss with olive oil, salt, and pepper, then grill on medium heat for about 5-7 minutes until tender.

    Prepare the Fish

    Season the haddock or salmon fillets with salt and pepper. Optionally, you can lightly batter them for a crispier texture.

    Cook the Fish

    In a skillet over medium heat, add a bit of olive oil. Cook the fish fillets for about 4-5 minutes on each side until cooked through and golden brown.

    Make the Choo Chee Sauce

    In the same skillet, add the choo chee curry paste and cook for about 1 minute until fragrant. Then add the coconut milk and stir well. Bring to a simmer and add sliced red bell pepper, cooking for an additional 3-4 minutes until the peppers are tender.

    Serve

    Place the grilled asparagus on a plate and top with the cooked fish. Spoon the choo chee sauce with bell peppers over the top. Serve hot.
