Prepare the Chicken
Pound the chicken breasts to an even thickness. Season with salt and pepper. Dredge the chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.

Fry the Chicken
Heat vegetable oil in a frying pan over medium-high heat. Fry the breaded chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Cook the Noodles
In a separate pot, cook the lomein noodles according to package instructions. Drain and set aside.

Stir-Fry the Vegetables
In the same pan used for the chicken, add the mixed vegetables and stir-fry for 3-4 minutes until tender.

Combine Noodles and Vegetables
Add the cooked lomein noodles to the pan with the vegetables and toss to combine. Add a splash of sweet and sour sauce for flavor.

Assemble the Dish
Plate the noodle and vegetable mixture, top with the fried chicken, and drizzle with additional sweet and sour sauce and tong kutsu sauce.
