Cooking Instructions
- 1
Prepare the Ingredients
Start by chopping the scallions, onion, bell peppers, and fresh basil leaves. Dice the chicken breast and cube the tofu.
- 2
Cook the Chicken
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the diced chicken and cook until it's browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
- 3
Cook the Tofu
In the same skillet, add another tablespoon of oil and add the cubed tofu. Fry until golden brown, about 4-5 minutes. Remove and set aside with the chicken.
- 4
Sauté the Vegetables
Add another tablespoon of oil to the skillet. Sauté the onion and garlic until fragrant, about 2 minutes. Then add the bell peppers and scallions, cooking for an additional 3-4 minutes until softened.
- 5
Combine Everything
Stir in the cooked rice, chicken, and tofu. Mix well and let it fry together for another 3-4 minutes. Add the chopped basil and toss everything to combine.
- 6
Serve
Serve the basil fried rice hot, garnished with extra basil if desired.
