Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a 1:1.5 rice to water ratio. Once cooked, spread the rice on a baking sheet to cool and dry out, ideally letting it sit for at least 30 minutes.

Chop the Vegetables
While the rice is cooling, finely chop the carrot, bell pepper, and green onions. Mince the garlic cloves.

Stir-Fry the Vegetables
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the chopped carrots, bell peppers, green peas, and corn. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

Add the Rice
Add the cooled jasmine rice to the skillet with the vegetables. Stir to combine and break up any clumps of rice.

Season the Fried Rice
Pour the soy sauce and sesame oil over the rice and vegetables. Season with salt and black pepper to taste. Stir-fry everything together for an additional 3-5 minutes, ensuring the rice is heated through and evenly coated.

Remove the fried rice from the heat. Garnish with sliced green onions on top before serving. Serve hot as a side dish or as a main meal.
