1. Soak the Rice
In a large bowl, rinse the basmati rice under cold water until the water runs clear. Then, soak the rice in water for at least 30 minutes. Drain and set aside.
2. Marinate the Pork
In a mixing bowl, combine the cubed pork shoulder with yogurt, biryani masala, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.
Cooking
3. Cook the Onions
In a large pot or Dutch oven, heat the cooking oil or ghee over medium heat. Add the thinly sliced onions and sauté until they are golden brown. Remove half of the onions and set aside for garnishing.
4. Cook the Pork
To the remaining onions in the pot, add the marinated pork and cook until browned on all sides. Add the chopped tomato and cook for an additional 5 minutes until the tomato softens.
5. Add Water
Pour in the 4 cups of water and bring to a boil. Reduce the heat to low and cover the pot, letting the pork simmer for about 30 minutes or until tender.
6. Layer the Rice
Once the pork is tender, layer the soaked and drained basmati rice evenly over the pork mixture. Sprinkle chopped cilantro and mint leaves on top.
7. Cook the Biryani
Cover the pot with a tight-fitting lid and cook on low heat for about 20 minutes, allowing the rice to steam and absorb the flavors. Do not lift the lid during this time.
