    Rinse the Rice

    In a bowl, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Prepare Vegetables

    Chop the mixed vegetables into small pieces. Slice the onion and chop the tomato.

Cooking

    Sauté the Aromatics

    In a large pot, heat the vegetable oil or ghee over medium heat. Add cumin seeds and let them sizzle for about 30 seconds. Then add the sliced onions and sauté until they turn golden brown.

    Add Ginger and Garlic

    Add the minced ginger and garlic to the pot. Sauté for another minute until fragrant.

    Cook the Vegetables

    Add the chopped tomato and mixed vegetables to the pot. Stir well and cook for about 5-7 minutes until the vegetables are slightly tender.

    Add Spices

    Stir in the coriander powder, turmeric powder, garam masala, cinnamon stick, cloves, and cardamom pods. Mix well and sauté for 2-3 minutes.

    Combine Rice and Water

    Add the soaked and drained basmati rice to the pot. Gently mix to combine with the vegetables and spices. Pour in the water and add salt.

    Cook the Biryani

    Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 15-20 minutes, or until the rice is fully cooked and the water is absorbed.

    Fluff and Serve

    Once cooked, remove from heat and let it sit, covered, for 5 minutes. Then fluff the biryani with a fork and serve hot.
