Method

Prepare the Filling

    Boil the Vegetables

    In a large pot, boil potatoes until soft. Add carrots and green peas for the last 5 minutes of boiling. Drain and let cool.

    Mash the Vegetables

    Once cooled, mash the boiled potatoes, carrots, and peas together in a bowl.

    Sauté the Onions

    In a pan, heat a little oil and sauté chopped onions until translucent. Add ginger-garlic paste and green chilies, and sauté for another minute.

    Mix the Filling

    Add the mashed vegetables to the pan. Stir in coriander powder, cumin powder, garam masala, and salt. Cook for another 5 minutes. Finally, add chopped coriander leaves and mix well.

Make the Rolls

    Prepare the Dough

    In a bowl, combine whole wheat flour, salt, and oil. Gradually add water and knead into a soft dough. Cover with a damp cloth and let it rest for 30 minutes.

    Roll the Dough

    Divide the dough into equal balls. Roll each ball into a thin circle on a floured surface.

    Cook the Roti

    Heat a skillet over medium heat. Cook each rolled dough for about 1-2 minutes on each side until golden brown. Set aside.

    Assemble the Rolls

    Take a cooked roti, place a portion of the filling in the center, and sprinkle with chaat masala and drizzle with lemon juice. Add green chutney to taste.

    Fold the sides of the roti over the filling and roll it tightly. Serve warm.
