Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine plain yogurt, tandoori masala, minced garlic, grated ginger, lemon juice, salt, and olive oil. Mix well until smooth.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for best flavor.

Cooking the Chicken

  1. 3

    Preheat the Grill

Preheat your grill or a grill pan over medium-high heat.

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 75°C (165°F).

  3. 5

    Rest the Chicken

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing it into strips.

Assembling the Roll

  1. 6

    Prepare the Wraps

Warm the whole wheat wraps or naan in a dry skillet for about 30 seconds on each side until pliable.

  2. 7

    Assemble the Rolls

Place a generous amount of shredded lettuce on each wrap. Top with a few slices of grilled chicken, tomato, cucumber, and red onion.

  3. 8

    Add Sauce and Wrap

Drizzle with mint chutney or yogurt sauce. Roll the wrap tightly to enclose the filling, folding in the sides as you go.

  4. 9

    Serve

Cut the rolls in half and serve immediately, optionally with extra mint chutney or yogurt sauce on the side.
