Marinade Preparation

Make the Marinade
In a large bowl, combine yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, paprika, turmeric powder, garam masala, salt, black pepper, and cayenne pepper (if using). Mix well to create a smooth marinade.

Marinate the Chicken
Add the chicken thighs or drumsticks to the marinade. Ensure that each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Preheat the Tandoor or Oven
If using a tandoor, prepare it according to the manufacturer's instructions. If using an oven, preheat it to 475°F (245°C) and place a baking sheet on the middle rack.

Prepare the Chicken for Cooking
Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps in even cooking.

Cook the Chicken
Place the marinated chicken in the tandoor or on the preheated baking sheet. Cook for 20-25 minutes, turning once halfway through, until the chicken is cooked through and has a nice char. An internal temperature of 165°F (75°C) should be reached.
