Frites Preparation

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form the frites.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps them become crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 325°F (163°C). You can use a thermometer to check the temperature.

    Fry the Potatoes

    Drain and dry the potatoes thoroughly. Fry them in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

    Double Fry the Potatoes

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 3-4 minutes until golden brown and crispy. Drain on paper towels and sprinkle with salt.

Steak Preparation

    Season the Steaks

    While the fries are frying, season the ribeye steaks generously with salt and black pepper on both sides.

    Heat the Skillet

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Steaks

    Add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Add Butter and Herbs

    During the last minute of cooking, add butter and fresh thyme to the skillet. Baste the steaks with the melted butter.
