    Prepare the Ingredients

    Peel and devein the shrimp if not already done. Dice the carrot, bell pepper, and slice the green onions. Mince the garlic and ginger.

    Cook the Rice

    If you do not have day-old rice, you can cook rice and let it cool completely before using it in the recipe.

    Cook the Egg

    In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.

    Stir-Fry the Shrimp

    In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Then, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

    Add Vegetables

    In the same skillet, add a bit more sesame oil if needed. Stir in the diced carrots, bell pepper, and peas. Cook for 3-4 minutes until they are tender but still crisp.

    Combine Ingredients

    Add the cooked rice to the skillet with the vegetables and stir well to combine. Pour in the soy sauce, and season with salt and black pepper to taste. Add the cooked shrimp and scrambled eggs back into the skillet. Stir everything together until heated through.

    Finish and Serve

    Finally, fold in the sliced green onions and give it one last stir. Serve the shrimp fried rice hot, garnished with additional green onions if desired.
