Method

Cooking the Rice

  1. 1

    Rinse the Rice

Begin by rinsing 1 cup of rice under cold water until the water runs clear. This removes excess starch and prevents the pudding from becoming too sticky.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed rice with 4 cups of milk and 1 tsp of salt. Bring the mixture to a boil over medium heat, stirring occasionally.

  3. 3

    Simmer

Once at a boil, reduce the heat to low and cover the saucepan. Let it simmer for about 20 minutes, or until the rice is tender and most of the milk has been absorbed.

Adding Flavor

  1. 4

    Add Sugar and Flavorings

Stir in 1 cup of sugar, 1 tsp of vanilla extract, 1 tsp of cinnamon, and 0.5 tsp of nutmeg into the cooked rice. Mix well until all ingredients are thoroughly combined.

  2. 5

    Add Raisins

Fold in 0.5 cup of raisins into the mixture, ensuring they are evenly distributed throughout the pudding.

  3. 6

    Simmer Again

Cover the saucepan again and let the mixture simmer for an additional 10-15 minutes, stirring occasionally, until the pudding thickens to your desired consistency.

Serving the Pudding

  1. 7

    Serve Warm or Chilled

Remove the pudding from heat and let it cool slightly. You can serve it warm or chill it in the refrigerator for a couple of hours.

  2. 8

    Garnish

Before serving, sprinkle each serving with 1 tsp of ground cinnamon and add chopped nuts if desired.
