Method

Filling Preparation

  1. 1

    Combine Ingredients

In a large bowl, combine the ground pork, minced garlic, grated ginger, chopped green onions, chopped cilantro, soy sauce, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Dough Preparation

  1. 2

    Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while kneading the mixture until a smooth and elastic dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Assembling Mo:Mo

  1. 3

    Roll Out Dough

After the dough has rested, divide it into small balls (about the size of a golf ball). Roll each ball into a thin circle (about 3 inches in diameter) on a floured surface.

  2. 4

    Fill Mo:Mo

Place a spoonful of the pork filling in the center of each circle. Fold the dough over the filling and pinch the edges together to seal. Make sure there are no air pockets.

Cooking Mo:Mo

  1. 5

    Steam the Mo:Mo

Place the filled Mo:Mo in a steamer basket lined with parchment paper, ensuring they are not touching each other. Steam over boiling water for about 20 minutes or until the pork is fully cooked.

Chili Sauce Preparation

  1. 6

    Prepare the Sauce

In a saucepan, combine the tomato paste, chili powder, minced garlic, soy sauce, and water. Bring to a simmer and cook for 5-7 minutes, stirring occasionally. Add sugar and salt to taste.

Serving

  1. 7

    Serve Hot

Once the Mo:Mo are cooked, serve them hot with the chili sauce on the side for dipping.
