Preparation

    Prepare the Pork

    Slice the pork tenderloin into thin strips, about 1/4 inch thick. Season with salt and black pepper.

    Prepare the Vegetables

    Chop the green onions (keep the green and white parts separate). Finely dice the carrot.

Cooking

    Cook the Pork

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the pork strips and stir-fry until cooked through, about 4-5 minutes. Remove the pork from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until fully cooked, about 2-3 minutes. Remove and set aside with the pork.

    Stir-Fry the Vegetables

    Add the remaining tablespoon of vegetable oil to the skillet. Add the diced carrot and the white parts of the green onions. Stir-fry for 2-3 minutes until the carrots are tender.

    Combine Ingredients

    Add the cooked rice, pork, scrambled eggs, frozen peas, soy sauce, and sesame oil to the skillet. Mix well and stir-fry for an additional 3-4 minutes until heated through and combined.

    Finish with Green Onions

    Add the green parts of the green onions and stir everything together. Season with additional salt and black pepper to taste.

Serving

    Plate and Serve

    Transfer the pork fried rice to serving plates and enjoy hot.
