Method

For the Paneer Filling

  1. 1

    Prepare the Vegetables

Chop the onion, capsicum, tomato, and green chili into small pieces.

  2. 2

    Cook the Paneer

Heat oil in a pan over medium heat. Add the chopped onion and sauté until translucent. Add ginger-garlic paste and green chili, and cook for another minute.

  3. 3

    Add Remaining Ingredients

Add capsicum, tomato, turmeric powder, cumin powder, garam masala, and salt. Cook for 5-7 minutes until the vegetables are tender.

  4. 4

    Add Paneer

Crumble the paneer into the pan and mix well. Cook for another 2-3 minutes, then remove from heat and set aside.

For the Paratha

  1. 5

    Make the Dough

In a mixing bowl, combine whole wheat flour and salt. Gradually add water, kneading to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.

  2. 6

    Roll the Parathas

Divide the dough into equal portions. Roll each portion into a ball, then flatten and roll out into a circle (approx. 6 inches in diameter) using a rolling pin. Apply oil to both sides.

  3. 7

    Cook the Parathas

Heat a tawa or skillet over medium heat. Cook each paratha for 2-3 minutes on each side until golden brown, applying more oil as needed.

Assemble the Katti Rolls

  1. 8

    Fill the Paratha

Place a paratha on a plate, add the paneer filling in the center, and top with chutney, onion slices, and a squeeze of lemon.

  2. 9

    Roll it Up

Carefully roll the paratha tightly around the filling. You can wrap it in parchment paper or foil for easier handling.

  3. 10

    Serve

Serve the paneer katti roll hot with extra chutney and lemon wedges on the side.
