Preparation of Rice

    Rinse and Soak Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes.

    Cook Rice

    In a large pot, bring 4 cups of water to a boil. Add the soaked rice and 1 tsp of salt. Cook until the rice is 70% done. Drain and set aside.

Paneer Marinade

    Marinate Paneer

    In a bowl, mix together the yogurt, turmeric powder, garam masala, red chili powder, ginger-garlic paste, and 0.5 tsp of salt. Add the cubed paneer and coat well. Allow to marinate for at least 30 minutes.

Cooking Biryani

    Fry Onions

    In a large pan, heat 3 tbs of oil or ghee over medium heat. Add the sliced onions and fry until golden brown. Remove half for garnishing.

    Add Spices

    To the remaining onions in the pan, add cumin seeds, cinnamon stick, cloves, and bay leaf. Sauté for a minute until aromatic.

    Add Vegetables

    Add the chopped tomatoes and slit green chilies. Cook until the tomatoes soften.

    Add Marinated Paneer

    Add the marinated paneer to the pan and gently mix with the spices and vegetables. Cook for 5-7 minutes.

    Layer Biryani

    In a large pot, layer half of the cooked rice. Add the paneer mixture followed by the remaining rice. Sprinkle chopped coriander and mint leaves over the top.

    Dum Cooking

    Cover the pot with a tight lid and cook on low heat for 20 minutes to allow the flavors to meld.

Serving

    Garnish and Serve

    Garnish the biryani with the fried onions reserved earlier. Serve hot with raita or salad.
