Preparation

Soak the Rice Noodles
Place rice noodles in a large bowl and cover with hot water. Let them soak for about 20-30 minutes until softened. Drain and set aside.

Prepare the Sauce
In a small bowl, whisk together soy sauce, fish sauce, brown sugar, and lime juice until well combined. Set aside.

Cook the Proteins
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken and cook for 3-4 minutes until browned. Add the shrimp and cook until they turn pink, about 2-3 minutes. Push the proteins to one side of the skillet.

Add Vegetables
Add the julienned carrot and bean sprouts to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender.

Combine with Noodles
Add the soaked rice noodles to the skillet along with the prepared sauce. Toss everything together for 2-3 minutes until all ingredients are well coated and heated through.
Serving

Plate the Pad Thai
Serve hot, garnished with chopped green onions, crushed peanuts, cilantro, and lime wedges. If desired, add Sriracha for extra heat.
