Preparation of Spices

    Roast the Whole Spices

    In a dry skillet, add cumin seeds, coriander seeds, black peppercorns, and poppy seeds. Toast them over medium heat until fragrant. Let them cool and then grind into a fine powder.

Cooking the Chicken

    Sauté Onions

    In a large pan, heat some oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell dissipates.

    Cook Tomatoes

    Add the pureed tomato and cook until the mixture thickens and oil starts to separate from the masala.

    Add Chicken and Spices

    Add the cubed chicken, ground spice mixture, turmeric powder, red chili powder, and salt. Mix well to coat the chicken with the spices.

    Add Curry Leaves

    Toss in the curry leaves and stir well. Cook for about 5-7 minutes until the chicken is no longer pink.

    Add Coconut Cream

    Pour in the coconut cream, stir gently, and let it simmer for another 10 minutes on low heat until the chicken is tender and the sauce thickens.

Serving

    Garnish and Serve

    Once cooked, garnish the Malai Chicken Curry with chopped fresh coriander leaves. Serve hot with lemon wedges on the side.
