    Marinate the Lamb

    In a bowl, combine the lamb cubes with vinegar, salt, turmeric, red chili powder, and coriander powder. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Cooking

    Cook the Aromatics

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add the chopped onions and sauté until they are golden brown.

    Add Garlic and Ginger

    Add minced garlic and ginger to the pot. Sauté for another 2-3 minutes until fragrant.

    Cook the Lamb

    Add the marinated lamb to the pot. Sear the lamb on all sides for about 5-7 minutes, stirring occasionally.

    Add Potatoes and Spices

    Stir in the diced potatoes and slit green chili. Add turmeric and red chili powder, mixing well to coat everything in the spices.

    Simmer

    Pour in enough water to cover the lamb and potatoes. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 1.5 hours, or until the lamb is tender and the potatoes are cooked through.

    Final Adjustments

    Taste and adjust the seasoning with more salt or vinegar if needed. Cook for an additional 10 minutes uncovered to thicken the sauce.
